Every good restaurant has a Renata. She's the floor manager, and on a full Friday she's the reason the room works. She's the one who knows the couple at table nine are there for a promotion, not the anniversary the reservation says, because the husband mentioned it at the bar a month ago. Which regulars never call ahead, and never need to. Which table wants to be left alone. Whose name to have ready at the door next time.

One day she leaves. There's always a better offer across town.

The owners tell each other they'll be fine. There's a reservation book, a point of sale, a training binder. What they don't say is that the facts are walking out in her coat. Next month that couple comes back to a room that's forgotten them.
